With Mike’s Chicken finally setting up a new location in Dallas this April 21, Han Dao recounts their restaurant’s history which heavily relied on Tram Dao, her mother according to a Dallas Morning News article from April 13 which reports,
“She said her mother, Tram Dao, who first started Mike’s Chicken as a mother’s mission to make better food for her son than the fast-food chicken he loved, will run the kitchen solo at the new restaurant until more staff is hired. Finding staff is a huge challenge, but they will open with the resources they have, she said.
“When she first opened it, she really didn’t think anyone would come,” Dao said of her mother’s first foray into selling fried chicken. But the restaurant’s peanut oil-fried chicken became popular enough that a second and more central location was warranted, and plans for additional locations are in the works, she said.
Her mother is the brains behind the restaurant’s recipes and is working on a few new recipes for the new location, including a new sauce and updated sides, Dao said.
“She’s very vague with everyone in the family about her recipes,” she added. “She won’t even tell us what they are really until they’re done.”
Mike’s Chicken will bring their famous chicken accompanied by desserts and signature sauce according to a CultureMap Dallas article from January 12. They say,
“They offer tenders as well as a half chicken, plus lots of combos such as white meat with breast & wing, or dark meat with leg & thigh. You can get them by the piece or in a plate with two sides and choice of biscuit or Texas toast.
The chicken has a distinctive spice blend that includes sage, turmeric, lemon, and ghost peppers. Everything is cooked in 100 percent refined peanut oil.
The biscuits are serious: tall cylinders, fluffy yet dense, brushed with a honey glaze. Desserts include churros with caramel filling, and caramel bread pudding with seasonal fruits such as apples and peaches.
They also advise that you “don’t forget to try Mike’s Buffalo Sauce,” whose secret ingredient is peanuts. “It will change you!” they promise.”
Mike’s Chicken may sound like an ordinary restaurant with a special chicken recipe but this is not all true. Mike’s Chicken is all about the start to finish in preparing their chicken which they hand pick, hand-cut and reviving it altogether to create a truly outstanding meal.
