Koryo Korean BBQ is the new Koryo Kalbi as it opened its doors with new changes according to a Dallas Morning News article from October 15 which reports,Â
“One of Dallas’ most beloved, historic Korean restaurants closed during the pandemic. Now, in a slightly different form but with the same dining room, it’s back.
Koryo Korean BBQ, which opened Oct. 1, 2021, is a revival of Koryo Kalbi, which sat in the heart of Dallas’ Koreatown neighborhood for decades. It’s also a sort of spiritual successor to the restaurant which, in its long history, had become one of the city’s best-known spots for bulgogi, grilled meats, and traditional soups.”
The new owners of Koryo revealed that they have upgraded not just their food and menu which now includes some seafood but also developed their interior designs according Koryo’s new owners. An Eater Dallas article from October 4 quotes them,
“Our menu is pretty much the same as before, the same chefs and aunties making the same recipes, … [We] renovated the interior and raised the bar on beef quality because we have access to our own warehouse that distributes meat.”
In addition to Korean barbecue favorites like kalbi, more exciting new eats are in the works. Diners will soon be able to feast on live eel grilled over charcoal, soy-marinated blue crabs (ganjang gejang), and Prime meats that will be dry-aged at the restaurant. Top-quality Japanese beef will also, eventually, be on the menu.”
Currently, the new Korean BBQ restaurant is in its soft-opening and is serving a limited number of customers from 10 AM to 10 PM Sunday through Thursday and 10 AM to 12AM on Fridays and Saturdays.
